Easy & Delicious Mexican Cheesy Chicken & Rice

I received this delicious recipe from my Mom, who got it from my Grandma. This is so simple to make and the taste is unbelievably good. It is a family favorite in my home. Enjoy!

What you need:

-1 lb Chicken (3-4 breasts)

-1 tbsp oil

-1 medium onion

-1 medium green pepper

 – 10 oz. Package of FROZEN sweet corn

-1 can chicken broth

-16 oz. Or 2 cups Mild salsa (or whatever spice level you prefer)

-2 cups Minute Rice

-2 cups shredded cheddar cheese

Instructions: 

Heat oil, add diced chicken, onion and green pepper.

Cook until cooked all the way through (about 15 minutes)

Pour in broth and salsa. Add corn. Mix and bring to a boil.

Stir in your 2 cups of Minute Rice, mix, cover and turn off heat.

Let stand 10 minutes.

Stir in cheese and you’re done!
