I received the Phil’em Up baking mix and Trish the Dish. I LOVE cookies, so I of course made Phil’em Up first! I was a little skeptical of the fruit crisp so I have not baked that one up yet. Although I will be shortly with some fresh apples and pears!

Gluten-free oats, cranberries and callabaut chocolate.

Phil’em Up

“Fast Phil always has a lot going on. Husband, father of three, Harvard man, entrepreneur, hockey jock, musician, all around great guy. Phil does everything fast. I don’t even want to know his wpm, his fingers flying to keep up with his thoughts. He can reply to a text or an email faster than I can press send. Speed has its price. The man burns through fuel like a growing teenager. So when Phil began consulting with Among Friends, he came with a warning label from his lovely wife and my good buddy Kate: “Don’t let him get hungry.” Her words proved to be prescient, especially when fast breadloving Phil discovered he was gluten intolerant. Now, when Phil’s energy flags, we just roll him cookies across the conference table–slowburning gluten-free oatmeal cookies studded with chocolate, coconut, and cranberries. In Phil’s world, you can never have too much of a good thing. “

All you need is:
1 egg
1 tsp vanilla
and
4 tbsp of very soft butter
and of course the package of phil’em up baking mix
They only take less than 10 minutes to bake and they come out so chewy and scrumptious. I love how quickly they are to whip up and how they taste just like homemade!!

I will admit that I was a little nervous because I do like to try a lot of gluten free products but some are better than others and cookies are either good or really bad.
I am happy to report that Among Friend’s baking mixes are 100% worth trying. I couldn’t even tell they were gluten free to be completely honest with you because they were so soft and tasty!
I highly recommend them!

  1. Francie’s sounds best! I can’t resist trying a brownie, and I want to see what sort of brownie is possible with less fat and sugar!
